Ingredients
  

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1 ¼ cups milk
  • 1 egg
  • 3 tbsp melted butter plus more for cooking
  • 1 tsp vanilla extract optional

Instructions
 

  • In a large bowl, whisk together flour, baking powder, sugar, and salt.
  • In a separate bowl, whisk the milk, egg, and melted butter until smooth.
  • Pour wet ingredients into dry ingredients and stir gently until just combined — do not overmix.
  • Heat a lightly buttered griddle or non-stick pan over medium heat.
  • Pour ¼ cup of batter for each pancake; cook until bubbles form on top and edges look set, about 2 minutes.
  • Flip and cook another 1–2 minutes until golden brown.
  • Serve warm with butter, syrup, or fresh fruit.

Notes

💡 Keep your skillet at medium heat — too hot and the pancakes brown before cooking through.

🧊 Leftovers can be frozen in a zip bag for up to 2 months. Reheat in the toaster or microwave.
