Ingredients
  

Crust

  • 250 g about 2 cups Biscoff biscuits, crushed
  • 100 g 7 tbsp unsalted butter, melted

Filling

  • 400 g 14 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • Β½ cup powdered sugar
  • β…“ cup Biscoff spread cookie butter
  • 1 teaspoon vanilla extract

Topping

  • ΒΌ cup Biscoff spread melted slightly
  • Crushed Biscoff biscuits for garnish

Instructions
 

Make the crust:

  • Combine crushed Biscoff biscuits and melted butter. Press firmly into the base of an 8-inch springform pan. Chill for 15 minutes.

Whip the filling:

  • Beat cream cheese, powdered sugar, and vanilla until smooth.

Add cookie butter:

  • Mix in Biscoff spread until fully combined.

Fold in whipped cream:

  • Beat the heavy cream to soft peaks, then gently fold into the mixture.

Spread & chill:

  • Pour over the crust, smooth the top, and refrigerate for at least 4 hours (or overnight).

Finish:

  • Drizzle melted Biscoff spread and sprinkle crushed biscuits before serving.
