Pizza Pinwheels

Fun, freezer-friendly pizza pinwheels that kids love in their lunch boxes. Make a big batch on Sunday and freeze for weeks of easy school lunches.

Ingredients
  

  • 4 large flour tortillas 10-inch
  • ½ cup pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup mini pepperoni slices
  • diced bell peppers or sliced olives optional

Instructions
 

  • Spread 2 tablespoons of pizza sauce evenly over each tortilla, leaving a 1/2-inch border at the edges.
  • Sprinkle mozzarella and pepperoni evenly over the sauce.
  • Roll each tortilla tightly into a log. Wrap in plastic wrap and refrigerate for 30 minutes (this makes slicing easier).
  • Slice each roll into 1-inch pinwheels (about 8-10 per tortilla).
  • Place pinwheels flat on a parchment-lined baking sheet and freeze for 1 hour.
  • Transfer frozen pinwheels to a labeled freezer bag. Keeps for up to 3 months.

Notes

To serve: Pack 4-5 frozen pinwheels in the lunch box in the morning. They thaw by lunchtime — no heating needed!
Variations: Try ham and cheese, or swap pizza sauce for pesto. Add spinach for hidden veggies.
