Pizza Pinwheels
Fun, freezer-friendly pizza pinwheels that kids love in their lunch boxes. Make a big batch on Sunday and freeze for weeks of easy school lunches.

- 4 large flour tortillas 10-inch
- ½ cup pizza sauce
- 1 ½ cups shredded mozzarella cheese
- ½ cup mini pepperoni slices
- diced bell peppers or sliced olives optional
Spread 2 tablespoons of pizza sauce evenly over each tortilla, leaving a 1/2-inch border at the edges.
Sprinkle mozzarella and pepperoni evenly over the sauce.
Roll each tortilla tightly into a log. Wrap in plastic wrap and refrigerate for 30 minutes (this makes slicing easier).
Slice each roll into 1-inch pinwheels (about 8-10 per tortilla).
Place pinwheels flat on a parchment-lined baking sheet and freeze for 1 hour.
Transfer frozen pinwheels to a labeled freezer bag. Keeps for up to 3 months.
To serve: Pack 4-5 frozen pinwheels in the lunch box in the morning. They thaw by lunchtime — no heating needed!
Variations: Try ham and cheese, or swap pizza sauce for pesto. Add spinach for hidden veggies.
Storage: Freezer for up to 3 months. Fridge for up to 3 days.
