Total Time 10 minutes mins
- 1 ½ cups old-fashioned rolled oats
- ½ cup creamy peanut butter or sunflower seed butter
- ⅓ cup honey
- ½ cup mini chocolate chips
- 2 tablespoons ground flaxseed
- 1 teaspoon vanilla extract
- pinch of salt
Combine all ingredients in a large bowl and stir until everything is evenly mixed.
Refrigerate the mixture for 15-20 minutes (makes it easier to roll into balls).
Roll into 1-inch balls (you should get about 24 bites).
Place on a parchment-lined baking sheet and freeze for 1 hour. Transfer to a labeled freezer bag.
To serve: Pack 3-4 frozen bites in the morning. They thaw quickly and taste great slightly chilled.
Kid involvement: Let kids help measure, stir, and roll — they love making these!
Variations: Add shredded coconut, dried cranberries, or swap chocolate chips for butterscotch chips.
Storage: Freezer for up to 3 months. Fridge for up to 1 week.
