Banana Oat Energy Bites

No-bake energy bites that are naturally sweetened, packed with fiber, and loved by kids. The perfect healthy sweet treat for lunch boxes — and kids can help make them!

Ingredients
  

  • 1 ½ cups old-fashioned rolled oats
  • ½ cup creamy peanut butter or sunflower seed butter
  • cup honey
  • ½ cup mini chocolate chips
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions
 

  • Combine all ingredients in a large bowl and stir until everything is evenly mixed.
  • Refrigerate the mixture for 15-20 minutes (makes it easier to roll into balls).
  • Roll into 1-inch balls (you should get about 24 bites).
  • Place on a parchment-lined baking sheet and freeze for 1 hour. Transfer to a labeled freezer bag.

Notes

To serve: Pack 3-4 frozen bites in the morning. They thaw quickly and taste great slightly chilled.
Kid involvement: Let kids help measure, stir, and roll — they love making these!
Variations: Add shredded coconut, dried cranberries, or swap chocolate chips for butterscotch chips.
Storage: Freezer for up to 3 months. Fridge for up to 1 week.
